1 pkg. Rotini Noodles
1 pkg. Fiesta Ranch Hidden Valley Dips Mix
1 c. Mayo
1/4 c. Milk (optional... try it without first)
1 can Kidney Beans
1 large Tomato
1 Avocado
1/2 c. Canned Corn
1/2 c. Red Onion
Cook Pasta according to the package directions. Drain & Rinse in cold water.
Mix mayo and Fiesta Ranch together in large serving bowl. (I suggest that the milk be added after adding the vegetables if you would like it thinner... remember that the tomatoes, kidney beans, and corn may add additional liquid to the mix) Keep in the fridge until ready to add the rest of the ingredients.
Cut up tomato, avocado, and red onions into small pieces. Drain and rinse corn and kidney beans. Combine all with the above mayo/ranch mix then add pasta and toss.
Serve cold

Add Chicken - By adding chicken, you have a complete meal for you family!
Tomatoes - Use 3-4 roma tomatoes... they have less liquid and a milder taste for kids who may not like the traditional tomatoes.
Red Onions - Although the red onion adds a beautiful color to this dish, you can use whatever type of onion you have on hand. One of my favorites substitutions is the green onion... try cutting them up with sharp kitchen shears... this saves a whole lot of time!
